Pumpkin pies and soups are popular during this time of year. They are delicious and they are great in terms of nutritional value. They are even great for encouraging younger ones to enjoy a healthy diet. Apart from soup and pie, pumpkin can also used in another delicious recipe – pumpkin biscuits!
Ingredients:

  • 2 ½ cups flour (all-purpose)
  • 3 Tbsp brown sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ½ cup butter (sliced)
  • 2 cups pumpkin puree

Method:

  • Preheat your oven to 400 degrees F (or 205 degrees C).
  • Butter a large cookie sheet.
  • In a bowl, stir together the flour, baking powder, sugar, salt, cinnamon, nutmeg, and ginger.
  • Add the butter and use a pastry blender to mix it all together until the mixture looks like coarse crumbs.
  • Now add the pumpkin puree and mix to form your dough.
  • Flour a surface lightly and gently pat the dough out until it’s about ½ inch thick.
  • Cut out your biscuts and then place them on the cookie sheet.
  • Bake for 15 to 20 minutes.
  • Serve warm
