Fruit is a delicious and refreshing snack during warmer weather. However, when the colder weather sets in, you will most likely be looking for something a bit more comforting like this scrumptious baked fruit dish.
Ingredients:

  • 16 ounces apricot halves (drained)
  • 16 ounces pear halves (drained)
  • 30 ounces plums (drained and halved)
  • 29 ounces peach halves (drained)
  • 8 ounces pineapple slices (undrained)
  • 1/3 cup brown sugar
  • 1 Tbsp butter
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves

Method:

  • Grease a 13 x 9 inch baking pan and start arranging your fruit in rows. Follow this order: half of the apricots, half of the pears, half of the pears and half of the plums. The add all of the peaches, the rest of the apricots, pears, and plums.
  • Drain the pineapple and save ½ a cup of the juice. Now lay the pineapple over the fruit set in the pan.
  • In a saucepan, compine this juice with the sugar, butter, cloves, and cinnamon. Cook the mixture and stir until the sugar dissolves and the butter has melted.
  • Pour the mixture over the fruit and bake in the oven at 350° for 20-25 minutes or until the dish is heated all the way through.
  • This recipe yields 12 – 16 servings.
