Salsa is delicious as well as nutritious. There are a number of meals that can be served with salsa on the side. The flavour is refreshing and will complement several meals and snacks wonderfully without overpowering them. The best part of all is that fresh tomato salsa is very easy to make.
Ingredients:

  • 3 cups tomatoes (chopped)
  • ½ cup green pepper (chopped)
  • 1 cup onion (diced)
  • ¼ cup coriander (minced)
  • 2 Tbsp fresh lime juice
  • 4 tsp fresh chopped jalapeno pepper (optional)
  • ½ tsp cumin (ground)
  • ½ tsp black pepper
  • ½ tsp salt

Method:

  • When chopping your tomatoes, it is best to remove the pulp and seeds. Wash and slice the sides of the tomatoes to leave the middle for use in another dish like a stew. Slice the tomatoes and then dice them. You want to chop them quite fine.
  • Do the same for your peppers and onions. If you would like a sweeter salsa, be sure to use red onion.
  • If you choose to add jalapeno pepper, you should include the seeds for their spicey flavour and make sure that you mince the pepper up as finely as possible.
  • Once all of your ingredients are prepared, mix them all together in a bowl.
  • Keep this bowl in the fridge until it’s time to serve. If you make extra, you can keep some in the fridge for topping up your serving bowl as needed.
