Marshmallows are a delicious treat all on their own but, if you want to use them to make something extra scrumptious, here are some yummy marshmallow recipes.
Marshmallow Ice Cream
Ingredients:

  • 7 ounces mini marshmallows
  • 1 quart half and half
  • 4 egg yolks
  • ½ cup sugar
  • 1 tsp vanilla
  • ¼ cup hot fudge
  • ¼ cup graham cracker crumbs.

Method:

  • Line a baking sheet with parchment paper and arrange your marshmallows. Make sure they do not overlap and are spread out evenly.
  • Toast your marshmallows in the oven (usually takes less than a minute).
  • Heat the half and half over a medium heat until it starts to simmer and then stir in the vanilla.
  • Whisk together the eggs and sugar until light.
  • Add ¼ cup of half and half to the sugar mixture to temper it and then pour the rest in. Pour the combined mixture into a saucepan and cook until it thickens into custard.
  • Remove from heat, add the toasted marshmallows and whisk togeher.
  • Chill overnight before freezing according to your ice cream maker instructions.
  • Scoop your ice cream into a container and then add some fudge and graham cracker crumbs. Alternate your layers until you’re done and then freeze.
  • Once frozen, serve and enjoy!

Strawberry Marshmallow Shortcake
Ingredients:

  • 2 cups sliced strawberries
  • 2 Tbsp sugar
  • 8 slices frozen pound cake (½ inch thick slices)
  • 8 marshmallows cut in half

Method:

  • Combine the strawberries and sugar in a bowl and allow to sit for about 10 minutes.
  • Grill the frozen pound cake slices until you see grill marks and the cake is warm.
  • On top of each slice of cake, place 2 halves of a marshmallow and use a kitchen torch to toast.
  • Top with ¼ cup of strawberries and place two of these delicious slices on top of one another for each serving.

Marshmallow Popcorn
Ingredients:

  • 64 mini marshmallows or 8 large marshmallows
  • ½ cup brown sugar
  • ¼ cup butter
  • 1 bag popcorn

Method:

  • Pop the corn and place in a bowl.
  • Combine the rest of the ingredients and melt in your microwave,
  • Stir every 20 seconds so that the mixture melts and blends properly
  • Pour over the popcorn and toss the corn around before you dig in!
