If you want to enjoy a delicious snack along with your cup of coffee or tea, why not bake some fresh rusks? While you will need a few ingredients, the process is fairly simple and you will absolutely love the way they taste! Whether you enjoy dipping your rusks in a hot drink or nibbling on them in between sips, this rusk recipe is certainly worth trying.

Ingredients:

  • 2 cups white flour
  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • ½ cup sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 2 eggs
  • ½ cup butter (melted)
  • ¾ cup buttermilk
  • 2 teaspoons almond extract
  • 2 teaspoons vanilla extract

Directions:

  • This rusk recipe will require you to preheat your oven to 400 degrees Fahrenheit.
  • Mix all of the dry ingredients together and, in a separate bowl, combine the wet ingredients.
  • Add the wet ingredients to the dry ones and stir until you obtain a soft, biscuit-like dough.
  • Turn out the dough only a floured surface and pat or roll into the desired thickness (½ an inch)
  • Cut the dough into 2 x 4 inch rectangles.
  • Place these rectangles on a buttered baking sheet and place them 2 inches apart.
  • Bake for about 25 minutes or until they start to brown.
  • Remove from the oven and lower the oven temperature to 200 degrees Fahrenheit.
  • Place the rusks back in the oven for 12 hours to allow them to dry out.
  • Once finished, they will be dry and hard.
  • They should be stored in an airtight container so as not to become soggy. You should also allow them to cool properly before storing.

While this rusk recipe requires a fair bit of time, the process is simple. It’s best to begin in the early part of the morning and, while the rusks are drying out, you can go about your usual business around the house.
