Pies are one of the most popular types of comfort food during the cooler months. Chicken pot pie is not only delicious, but it’s also really easy to make and you only need basic ingredients. Soon, your pie will be filling your home with a delicious smell and the flavour is more than satisfying.
Ingredients:

  • 1 pound chicken (skinless, boneless, and cut in cubes)
  • 1 cup carrots (sliced)
  • 1 cup peas (frozen)
  • ½ cup celery (sliced)
  • 1/3 cup butter
  • 1/3 cup onion (chopped)
  • 1/3 cup flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp celery seed
  • 1 ¾ cups chicken broth
  • 2/3 cup milk
  • 2 pie crusts (9 inch)

Method:

  • Preheat the oven o 220 degrees C.
  • Combine the chicken, celery, carrots, and peas in a saucepan.
  • Add water to cover.
  • Boil for 15 minutes before removing from the heat and setting aside.
  • Over medium heat, cook the onions in butter until they are soft and translucent.
  • Add the flour, salt, pepper, and the celery seed.
  • Stir in the chicken broth and milk slowly.
  • Simmer over medium-low heat.
  • Once thickened, remove from heat and set aside.
  • Put one pie crust in a dish.
  • Add the chicken mixture.
  • Pour the liquid mixture over the top.
  • Cover with the second pie crust.
  • Cut away excess crust and cut small slits in the top to let steam escape while cooking.
  • Bake for 30 – 35 minutes or until golden brown.
  • Allow to cool for 10 minutes before serving.
