Cheesecake is a delicious treat that everyone can enjoy. Many people shy away from this recipe because of the common misconception that it’s difficult to master. Here is a delicious autumn cheesecake recipe you and your guests will love!
Ingredients:

  • 1 cup graham cracker crumbs
  • ½ cup pecans (finely chopped)
  • 3 Tbsp sugar
  • ½ tsp cinnamon
  • ¼ cup butter (melted)
  • 16 oz cream cheese (softened)
  • 2 eggs
  • ½ tsp vanilla extract
  • 4 cups apples (peeled, cored, and sliced)
  • 1/3 cup sugar
  • ½ tsp cinnamon
  • ¼ cup pecans (chopped)

Method:

  • Preheat your oven to 175 degrees C.
  • Stir together the cracker crumbs, finely chopped pecans (½ cup), 3 Tbsp sugar, ½ tsp cinnamon, and melted butter.
  • Press this mixture into a 9 inch pan.
  • Bake in the preheated oven for 10 minutes.
  • In a large bowl, combine ½ cup of sugar and cream cheese. Mix at medium speed until the mixture is smooth.
  • Beat in the eggs one at a time and then add the vanilla.
  • Pour this mixture into the crust.
  • In a small bowl, mix the 1/3 cup sugar and ½ tsp cinnamon.
  • Coat the apples with the cinnamon-sugar and spoon this mixture over th cream cheese layer.
  • Top with ¼ cup chopped pecans.
  • Bake for 60 – 70 minutes.
  • Use a knife to loosen the cake from the pan.
  • Allow to cool before removing the cake from the pan.
  • Chill before serving.
