Ingredients:
- 1 cup graham cracker crumbs
- ½ cup pecans (finely chopped)
- 3 Tbsp sugar
- ½ tsp cinnamon
- ¼ cup butter (melted)
- 16 oz cream cheese (softened)
- 2 eggs
- ½ tsp vanilla extract
- 4 cups apples (peeled, cored, and sliced)
- 1/3 cup sugar
- ½ tsp cinnamon
- ¼ cup pecans (chopped)
Method:
- Preheat your oven to 175 degrees C.
- Stir together the cracker crumbs, finely chopped pecans (½ cup), 3 Tbsp sugar, ½ tsp cinnamon, and melted butter.
- Press this mixture into a 9 inch pan.
- Bake in the preheated oven for 10 minutes.
- In a large bowl, combine ½ cup of sugar and cream cheese. Mix at medium speed until the mixture is smooth.
- Beat in the eggs one at a time and then add the vanilla.
- Pour this mixture into the crust.
- In a small bowl, mix the 1/3 cup sugar and ½ tsp cinnamon.
- Coat the apples with the cinnamon-sugar and spoon this mixture over th cream cheese layer.
- Top with ¼ cup chopped pecans.
- Bake for 60 – 70 minutes.
- Use a knife to loosen the cake from the pan.
- Allow to cool before removing the cake from the pan.
- Chill before serving.
