Just because you are on a gluten-free diet, does not mean that you can’t enjoy delicious biscuits. Here’s an easy recipe for scrumptious gluten-free biscuits!
Ingredients:

  • 2 ¼ cups all purpose gluten-free flour
  • ½ tsp xanthan gum IF the gluten-free flour already has guar gum or xanthan in the mixture
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 oz cream cheese (room temperature)
  • ¾ cup unsalted butter (melted)
  • 1 cup brown sugar
  • ½ cup sugar
  • 1 ½ tsp vanilla
  • 2 egg yolks (room temperature)
  • 2 cups semi-sweet choc chips

Method:

  • Place the gluten-free flour, xanthan, baking soda, and salt in a medium bowl and whisk together.
  • In another bowl, place the cream cheese and then add the melted butter, brown sugar and sugar. Mix with your mixer on medium for 2 minutes. The paddle attachment works best.
  • Add the vanilla and egg yolks to this mixture and continue mixing on a low-medium speed until the mixture is well blended.
  • Add the flour mixture to the cream cheese mixture while beating on low until all is combined.
  • Add the choc chips and mix on low or by hand.
  • Cover the bowl with plastic wrap and refrigerate for at least 4 hours (or up to 4 days).
  • When you are ready, remove your dough from the fridge and allow to stand for about 15 minutes to soften.
  • Preheat your oven to 375 degrees Fahrenheit.
  • Line your baking sheets with parchment paper.
  • Scoop even amounts of the dough and place them onto the parchment paper. They should be placed a few inches apart and you should have room for about 12 biscuits per baking tray.
  • Bake for 11 – 12 minutes and remove when the edges start to brown. The middles will be slightly undercooked but they will continue to cook while the cool down. If you prefer crunchie biscuits, you can cook them for a few minutes longer.
  • Allow them to sit on the baking sheet for a couple of minutes before placing them on a cooling rack to finish cooling.
