Whether you are on a strict diabetic diet or simply want to lower your sugar intake, you can’t go wrong with these delicious cupcakes.That’s right! You can enjoy scrumptious sweet treats like these cupcakes without upsetting your diet!
Ingredients:

  • ½ cup egg product (refrigerated) or 2 eggs
  • 3 Tbsp butter
  • 1 1/3 cups cake flour OR 1 ¼ cups all-purpose flour
  • 1/3 cup cocoa powder (unsweetened)
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup vegetable oil spread (60% – 70%)
  • ¾ cup sugar OR the equivalent of this amount in a substitute of your choice (Stevia is a great natural option)
  • 1 tsp vanilla
  • ¾ cup fat-free milk
  • Chocolate frosting (see below for recipe)

Method:

  • Let the eggs and butter to stand at room temperature for approximately 30 minutes. Line 18 muffin cups (2 ½ inch size) with bake cups.
  • Stir together the flour, cocoa powder, salt, and baking powder in a bowl. Set aside.
  • Preheat the oven to 375 degrees Farenheit.
  • In another bowl, beat together the vegetable oil spread and butter.
  • Slowly add the sugar or sugar substitute while mixing on medium. Scrape the side of the bowl constantly.
  • Beat for 2 minutes before adding the eggs. Mix well.
  • Add the vanilla and mix well again.
  • Now alternate between adding some milk and some of the flour mixture while beating on a low speed.
  • Once all the ingredients are mixed, fill each cup to the 2/3 mark.
  • Bake for 13 – 15 minutes or until the tops of the cupcakes bounce back when touched.
  • Allow them to cool for 5 minutes before removing the cupcakes from the tray and allow to cool further on a wire rack.
  • Make your chocolate frosting to top these delicious treats.

Frosting ingredients:

  • ¼ cup vegetable oil (60% – 70%)
  • 1 Tbsp unsweetened cocoa powder
  • ½ tsp vanilla
  • 1 ¼ cups powdered sugar or the equivalent in the sugar substitute of your choice
  • Fat-free milk

Method:

  • In a medium bowl, beat the vegetable oil spread, vanila, and cocoa powder together with an electric mixer (on medium) for about 30 seconds.
  • Slowly beat the powdered sugar into this mixture until smooth.
  • Add just enough milk to achieve the desired consistency.
