Kiwi fruit is a delicious and refreshing treat for those warmer days. If you really want to spruce things up, combine it with some passion fruit and you’ve got yourself a truly memorable dessert to impress your guests.
Start by softening your gelatin in a little bit of passion fruit juice. The amount of gelatin you use will depend on how many of these desserts you want to make and how much liquid you use. You will need to let the gelatin set for about 10 minutes before heating slowly to dissolve while stirring constantly. Once dissolved, you can then add the rest of your juice, some delicious fresh kiwi puree and some sugar if needed. Remember to dissolve the sugar in your passion fruit juice so that it blends well. Now pour portions of this mixture into each of your serving bowls or glasses – whatever you prefer – and allow to set in the fridge for at least two hours.
You will then need to make your top layer. Soften more gelatin in some water with sugar before heating and stirring it. Once dissolved, add milk, heavy cream, and some vanilla bean paste to the mixture. Pour over the top of your original layer and, again, allow to set in the fridge for a couple of hours. Top with some fresh kiwi cubes and serve!
Although this dessert does require a significant amount of time to prepare, the preparation itself is simple. While the layers set, you can always continue preparing the rest of your foods for your lunch or dinner party.
