Ingredients:

  • 155g butter
  • 125g brown sugar
  • 125g caster sugar
  • 1 egg
  • 1 ½ tsp vanilla essence
  • 1 Tbsp low fat milk
  • 280g plain flour
  • ½ tsp salt
  • ¼ tsp bicarb soda
  • ¼ tsp baking powder
  • 2 Tbsp instant coffee powder

Instructions:

  • Preheat your oven to 200 degrees C.
  • Line baking trays with baking paper.
  • Beat the brown sugar, caster sugar, butter, egg, vanilla, and milk together until fluffy.
  • In a different bowl, mix your remaining dry ingredients (flour, bicarb, baking powder, salt, and coffee).
  • Add the dry mixture to the sugar mixture and mix thoroughly.
  • Shape the dough into balls (2cm in size). If the dough is too soft to shape, you can chill the dough until it’s easier to work with.
  • Place these balls about 5cm apart on the baking trays.
  • Flatten the balls to about 1cm thickness.
  • Bake for about 10 minutes or until they are lightly browned.
  • Allow them to cool before serving and store these cookies in a cool, dry place and in a suitable container.
