If you enjoy coffee and biscuits, then you will love these delicious coffee biscuits! Not only do they require just a few basic ingredients, but they are also extremely quick and easy to prepare. Once you give this recipe a try, you’ll be making double batches to satisfy everyone in your home! This recipe makes approximately 24 biscuits depending on the size you cut them.
Ingredients:
- 155g butter
- 125g brown sugar
- 125g caster sugar
- 1 egg
- 1 ½ tsp vanilla essence
- 1 Tbsp low fat milk
- 280g plain flour
- ½ tsp salt
- ¼ tsp bicarb soda
- ¼ tsp baking powder
- 2 Tbsp instant coffee powder
Instructions:
- Preheat your oven to 200 degrees C.
- Line baking trays with baking paper.
- Beat the brown sugar, caster sugar, butter, egg, vanilla, and milk together until fluffy.
- In a different bowl, mix your remaining dry ingredients (flour, bicarb, baking powder, salt, and coffee).
- Add the dry mixture to the sugar mixture and mix thoroughly.
- Shape the dough into balls (2cm in size). If the dough is too soft to shape, you can chill the dough until it’s easier to work with.
- Place these balls about 5cm apart on the baking trays.
- Flatten the balls to about 1cm thickness.
- Bake for about 10 minutes or until they are lightly browned.
- Allow them to cool before serving and store these cookies in a cool, dry place and in a suitable container.
