Traditional Spanish tortillas are delicious and filling. They are the perfect comfort food and, the best part of all is that this recipe is extremely simple!
Ingredients:

  • 1 large onion (sliced)
  • 4 Tbsp olive oil
  • 25g butter
  • 400g potatoes peeled and chopped small
  • 6 garlic cloves
  • 8 eggs (beaten)
  • Handful of parsley chopped and extra for serving

Method:

  • Cook the onion in the oil and butter until soft (not brown).
  • Add the potatoes and cover the pan. Allow to cook for about 15 to 20 minutes. Stir occasionally.
  • Once the potatoes are soft, crush 2 garli cloves and stir in.
  • Add the beaten eggs.
  • Put the lid on and leave to cook slowly for about 20 minutes.
  • When the edges are golden but the centre still undercooked, flip it over. Use a plate to do this. Slide out of the pan and onto the plate before placing the pan upside down and flipping the plate over.
  • Once cooked, removed from the pan and top with parsley.
  • To serve, add warmed baguette slices stabbed with a fork and rubbed with the rest of the garlic. Add some grated tomatoes, salt, and a drizzle of olive oil for extra flavour.
