Chocolate and mint go together perfectly which is why we see so many choc chip desserts and sweet treats. If you love this combination, here’s how to make your own mint and choc chip pie.
You will need:

  • 2 cups whipping cream
  • 2 Tbsp confectioners’ sugar
  • 2 cups milk
  • 1 ½ tsp peppermint extract
  • 5 – 6 drops green food colouring
  • 7 ounce package vanilla instant pudding mix
  • 1 cup small choc chips
  • 1 baked pie shell (9 inch)

Method:

  • Beat together the cream and sugar until peaks form.
  • In another bowl, combine the peppermint extract, milk, and food colouring.
  • Add the vanilla pudding mix to the milk and mint mixture. Mix on low for about 2 minutes or until thick.
  • Fold the cream mixture into the pudding mixture and add the chocolate chips
  • Pour the mixture into the pastry shell and, if desired, feel free to top with a few extra choc chips.
  • Refrigerate for about three hours before serving.

While the green food colouring is optional, it’s important to remember that we “eat” with our eyes first. When we see green and chocolate together, we automatically associate it with mint and chocolate. So it works wonders for the presentation. Another important point to note is that you can make mini versions of this tart by using small, bite size pie shells instead.
