Cake is always delicious after a meal and even in between meals. Of course, for those who are trying to watch what they eat, cake might not be on the menu. This is where a delicious watermelon cake comes in. This “cake” is easy to make and it’s lighter than your average cake that’s high in carbohydrates.
You will need:

  • One watermelon
  • Frosting of your choice
  • Strawberries
  • Blackberries
  • Kiwis
  • Sliced or crushed nuts
  • Chocolate sprinkles

Method:

  • Start by cleaning your watermelon. You will need to cut off the top and the bottom. Then use something round as a guide to slice away the excess until you are left with a cylinder of watermelon without any of the skin.
  • Coat your watermelon with icing and smooth it out. Let it set in the refrigerator until stiff. This will make it easier to work with.
  • Sprinkle nuts along the side of the iced watermelon cake and then decorate with icing around the base to give your cake a nice finish.
  • Around the top, decorate the edge with strawberry halves. Follow this will a ring of blackberries and thn a few slices of kiwi.
  • Sprinkle with chocolate flakes and enjoy!
