When you want to treat somebody to something sweet but they are on a strict diabetic diet, there are plenty of delicious recipes without all the unnecessary sugar. Here are some great ideas of diabetic-friendly treats perfect for Valentine’s Day and other occasions.
Chocolate Bites
Ingredients:

  • ½ cup unsweetened cocoa powder
  • ½ cup sugar (divided)
  • Pinch of salt
  • 3 egg whites
  • 1/8 tsp cream of tartar
  • 1 tsp vanilla extract
  • 1 Tbsp confectioners sugar

Method:

  • Preheat your oven to 300 degrees F and use foil to line 2 baking sheets.
  • Sift the cocoa, half the sugar, and the salt together in a small bowl.
  • Beat the eggs and cream of tartar with an electric mixer until you notice soft peaks form.
  • Beat in the rest of the sugar until you achieve a glossy meringue with stiff peaks.
  • Fold in the cocoa mixture and add the vanilla extract.
  • Use a teaspoon to spoon the mixture onto your baking sheets.
  • Bake for approximately 25 minutes if you like them soft or 40 minutes if you prefer them crisp.
  • Dust with confectioners sugar and serve.

Dark Angel Food Cake
Ingredients:

  • 1 cup all-purpose flour (unbleached)
  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • ½ tsp ground cinnamon
  • 10 egg whites
  • 1 ¼ tsp cream of tartar
  • 1 ½ tsp vanilla extract
  • 1 cups fresh berries
  • Confectioners sugar

Method:

  • Preheat the oven to 350 degrees F.
  • Sift together the flour, cocoa, cinnamon, and ½ cup sugar together in a bowl.
  • Use an electric mixer to bet the egg whites and add the cream of tartar. Beat until soft peaks form.
  • Slowly beat in the rest of the sugar and vanilla extract. Beat until soft peaks form.
  • Fold the dry mixture into the wet mixture one cup at a time until blended.
  • Pour into a 10” tube pan and make sure there are no air pockets.
  • Bake for 40 minutes (or until the centre is cooked – use a toothpick to test)
  • Cool upside down on a bottle neck. This should take about 40 minutes.
  • Turn around and run a knife around the rim to loosen the cake. Remove the cake and place on a cooling rack
  • Serve topped with berries and a sprinkle of confectioners sugar.

Delicious bran cookies
Ingredients:

  • 1 box low-fat brownie mix
  • 2 ½ cups unprocessed bran
  • ¾ cup orange juice
  • ½ tsp coconut extract
  • Confectioners sugar

Method:

  • Preheat your oven to 350 degrees F
  • Use cooking spray to coat two baking sheets.
  • Combine the bran and brownie mix before adding the coconut extract and orange juice.
  • Drop the dough onto your baking sheets using a teaspoon.
  • Bake for 12 minutes, remove and place on a cooling rack.
  • Dust lightly with confectioners sugar if desired.
