Bananas are known for their nutritional value as well as their incredible flavour. They don’t have much of a shelf life so it’s a matter of eat now before they spoil. So, whether you have an abundance of ripe bananas in your home or you simply love banana flavoured dishes, then here are some recipes everyone should try at least once!
Banana Bread
Ingredients:

  • 140g butter and extra for the tin
  • 140g caster sugar
  • 2 large eggs (beaten)
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 mashed bananas (as ripe as possible)
  • 50g icing sugar
  • dried banana chips to decorate

Method:

  • Heat your oven to 180 degrees and butter your 2lb loaf tin. Line the tin with baking parchment.
  • Cream the sugar and butter together until light and fluffy.
  • Add the eggs slowly and some flour.
  • Once well blended, add the rest of the flour, baking powder, and the mashed bananas and fold together.
  • Pour the mixture into the tin and bake for about 30 minutes or until done. Use a skewer to test.
  • Allow to cool in the tin for 10 minutes before removing and cooling on a rack.
  • Mix your icing sugar with 2 – 3 teaspoons of water and drizzle over the top. Decorate with the dried banana chips and enjoy!

 
Banana Pudding
Ingredients:

  • 100g butter and extra for greasing
  • 2 ripe bananas
  • 100g muscovado sugar (light)
  • 100g self-raising flour
  • 2 tsp ground cinnamon
  • 2 eggs
  • 2 Tbsp milk
  • Icing sugar, ice cream, and toffee sauce for serving if desired

Method:

  • Use a 1-litre bowl to melt your butter in the microwave.
  • Add 1 ½ bananas and mash them into the butter.
  • Add the sugar, cinnamon, flour, eggs, and milk.
  • Mix well and slice the remaining banana for the top of your dish.
  • Place in the microwave again and cook on high for 8 minutes or until cooked through.
  • Serve warm and topped with your choice of icing sugar, ice cream, and toffee sauce.

 
Baked Bananas
Ingredients:

  • 4 ripe bananas
  • 64g chocolate buttons (large chocolate chips)
  • vanilla ice cream

Method:

  • Heat your oven to 200 degrees
  • Slit each banana down the one side but don’t cut all the way through.
  • Place the chocolate buttons along the slice.
  • Put each banana in a piece of foil and wrap them up.
  • Place on a baking sheet and cook for about 25 minutes or until the bananas are black.
  • Serve with ice cream
