Applesauce is used as a part of various meals and desserts. Of course, if you make too much and you have some leftover that you do not want to go to waste, you’re in luck. With just half a cup, you can make these delicious applesauce cookies!
Ingredients for the applesauce cookies:
- 2 ¼ cup all-purpose flour
- 1 tsp cinnamon
- ¼ tsp allspice
- ¼ tsp grated nutmeg
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- ½ cup salted butter (cut into chunks)
- 1 cup brown sugar
- 1 egg
- ½ cup applesauce
- ½ tsp vanilla extract
Ingredients for the glaze:
- 1 cup powdered sugar
- 1 Tbsp milk
- ½ tsp vanilla extract
Directions:
- Preheat your oven to 350ºF and line your cookie sheet with some parchment.
- Whisk together the flour, allspice, cinnamon, baking soda, baking powder, nutmeg and salt. Set this mixture aside.
- In another bowl, cream together the sugar and butter until light and fluffy.
- Beat in the egg, vanilla and applesauce until combined.
- Add the dry mixture to the wet mixture and mix on low until combined.
- Use a 2-tablespoon cookie scoop to portion the mixture onto your cookie sheets.
- Bake for 12 minutes or until the tops of the applesauce cookies bounce back when lightly pressed.
- Remove from the oven and place on a wire rack to cool.
- Now you can make the glaze by mixing all of the ingredients together. It might seem thick at first but it will loosen as you mix it.
- Spoon the glaze or pipe it over the cookies once they have cooled to room temperature.
Not only are these applesauce cookies the perfect treat for this time of year, but they also make great gifts for neighbours and friends. You can even take a plate to work so that you can share them with your co-workers.
