The summer season is perfect for enjoying some of our favourite refreshing desserts. Sorbet is a popular dessert and also a snack in between for those looking for something refreshing and fruity. If you want to try making your own, here are some delicious summer sorbet recipes.

Mango, Lime and Coconut

Ingredients:

  • 3 mangoes (peeled, cored and sliced)
  • 6 additional slices of lime
  • Juice and zest of 2 limes
  • 500ml coconut milk ice cream
  • Mint leaves

Directions:

  • Place half the quantity of mango in a bowl with half of the lime juice and half of the lime zest.
  • Cover and chill until you are ready to serve.
  • Place the rest of the mango in your freezer for about four hours (or until solid).
  • In a blender, pulse together the frozen mango, the rest of the zest and remaining lime juice.
  • Before serving, place the chilled mango in the bottom of the glasses.
  • Allow the frozen mango sorbet and coconut ice cream from the freezer to allow to soften a bit.
  • Scoop the mango sorbet and coconut ice cream on top of the mango pieces and decorate with mint leaves, lime slices and lime zest before serving this delicious summer sorbet.

Lemon Sorbet

Ingredients:

  • 250g white caster sugar
  • Juice of 2 – 3 lemons
  • Thick strip of lemon peel
  • Lemon zest from half a lemon
  • 2 Tbsp vodka (optional)

Directions:

  • Heat together 250ml of water, the sugar and lemon peel.
  • Once the sugar has dissolved, allow the mixture to boil and cook for 3 minutes before allowing it to cool.
  • Remove and discard the lemon peel.
  • Add 100ml of lemon juice to the sugar mixture.
  • If you plan on using vodka in this summer sorbet recipe, now is the time to add it.
  • Pour this mixture into a container and freeze for 90 minutes.
  • Mix the not-yet-frozen sorbet with a whisk before freezing again for four hours. Mix every hour until you notice the sorbet is firm but still easy to scoop.
  • Decorate with lemon zest curls when serving.

Strawberry and Roses

Ingredients:

  • 900g strawberries
  • 300g caster sugar
  • Juice of 1 lemon
  • 2 Tbsp rosewater
  • Pink rose petals for decoration

Directions:

  • Heat together the sugar with 300ml of water.
  • Once the sugar dissolves, allow to boil for 1 minute.
  • Pulse the strawberries in your blender until smooth.
  • Slowly add the sugar mixture to the strawberries in the blender while the blender is on the lowest possible speed.
  • Add rose water and lemon juice before blending again.
  • Pour the mixture into a large container and freeze until almost frozen,
  • Mix every 1 – 2 hours to blend any ice crystals that may form on top or around the edges.
  • Freeze until frozen.
  • When ready to serve, remove your summer sorbet from the freezer and allow to rest at room temperature for 15 minutes to soften it up just enough to scoop.

These summer sorbet recipes might take a little time to prepare but they all require basic ingredients and there’s no need for anything more than basic kitchen utensils and appliances. Once you practice with a few of these recipes, you can make larger batches so that they are ready whenever you need them!
