There are few things better than a good refreshing dessert in the warmer months. If you love the flavour and freshness of lemons, you will really enjoy this scrumptious lemon bar recipe. Easy to make with just a few basic ingredients, it is sure to make your family and friends beg for more.
Ingredients for the crust:
- 2 cups all-purpose flour
- ½ cup sugar
- ½ tsp salt
- 1 cup unsalted butter (melted)
- 1 tsp vanilla extract
Ingredients for the lemon filling:
- 2 ½ cups sugar
- 85g all-purpose flour
- 7 large eggs
- 1 cup lemon juice (fresh)
- 1 Tbsp lemon zest (finely grated)
- ¼ cup powdered sugar for dusting
Directions:
- Start by pre-heating your oven to 325F.
- Grease a 9X13 inch baking pan and line with parchment paper. Allow some extra to hang over the edges.
- To make the lemon bar crust, you need to combine the flour with the sugar and salt.
- Stir in the melted butter and vanilla until you form a smooth dough.
- Press the mixture into your baking pan and bake for about 20 minutes or until set.
- Remove the partially baked crust from the oven and set on a rack.
- For the lemon mixture, combine the flour, lemon zest and sugar using a whisk. Add the eggs and whisk until well blended.
- Add the lemon juice and whisk until smooth.
- Pour the filling mixture over the warm crust.
- Return the pan to the oven and bake until the filling has set. This normally takes about 25 – 30 minutes. If you notice the mixture still jiggles, allow it to bake for a few more minutes.
- Remove from the oven and set on a rack to cool completely before slicing.
- Dust with powdered sugar if desired. Just make sure they are cool when you do!
