Mini Egg Martini

This delicious Easter cocktail is easy to make and perfect for those with a sweet tooth.

Ingredients:

  • 25g mini chocolate eggs
  • 1 tsp honey
  • 25ml Baileys
  • 25ml crème de cacao
  • 50ml vodka
  • ice

Directions:

  • Crush the mini chocolate eggs using a pestle and mortar before tipping them into a small plate.
  • Brush the rim of a martini glass with some honey before dipping it into the crushed eggs.
  • Refrigerate the glass until needed.
  • In a cocktail shaker, mix the ice, crème de cacao, vodka and Baileys. Shake well and strain into your decorated glass and serve.

  • 1kg pink rhubarb stalks
  • 400g caster sugar (must be white)
  • 800ml gin

Directions:

  • Make sure that you wash the rhubarb thoroughly and trim the stalks. You will not need the base of the stalks or the leaves.
  • Cut each stalk into lengths of 3cm.
  • Place them into a large jar with your caster sugar.
  • Shake everything and place a lid on the jar.
  • Allow to rest overnight so that the sugar draws the juice out of the rhubarb.
  • After 24 hours, add the gin, seal and shake the mixture around.
  • Leave the mixture for about 4 weeks before drinking.
  • Use a muslin cloth to strain the liquor off and transfer into a bottle.

White Rabbit

Ingredients:

  • 80ml gin
  • 50ml double cream
  • 50ml amaretto
  • 1 tsp lemon curd
  • ¼ tsp vanilla paste.
  • Ice
  • Edible flowers to garnish

Directions:

  • Pour the gin, double cream, amaretto, lemon curd and vanilla paste into a cocktail shaker.
  • Add a handful of ice and shake well.
  • Strain into two cocktail glasses.

  • 1 tsp melted chocolate
  • 50ml coffee liqueur
  • 50ml Irish cream liqueur
  • 100ml vodka
