The summer season is perfect for indulging in some of our favourite refreshing sweet delights. Sorbet is a popular dessert and even in between snack for those looking for something refreshing and fruity. If you would like to try making your own here are some delicious summer sorbet recipes.

Lemon Sorbet

Ingredients:

250g white caster sugar

Juice of 2 – 3 lemons

2 Tbsp vodka (optional)

Thick strip of lemon peel

Lemon zest from half a lemon

Method:

  • Heat 250ml of water along with the sugar and lemon peel in a small pan.
  • Once the sugar has dissolved, bring the mixture to the boil.
  • Cook for 3 minutes before you remove from heat and allow to cool.
  • Remove the lemon peel and discard.
  • Measure 100ml of the lemon juice and add it to the sugar mixture.
  • Add vodka to this mixture if you choose to use vodka.
  • Pour the mixture into a freezer box and freeze for 90 minutes.
  • Mix it up with a whisk to break up the ice crystals and incorporate them into the mixture.
  • Return to the freezer.
  • Mix the sorbet once every hour for the next four hours.
  • Once firm but still scoopable, stop mixing and store in the freezer for up to a month.
  • When serving, decorate with lemon zest curls.

Mango, Lime and Coconut Sorbet

Ingredients:

3 mangoes (peeled, cored and sliced)

Juice and zest of 2 limes

6 additional slices of lime

500ml coconut milk milk ice cream

Mint leaves

Method:

  • Place half of the mango slices in a bowl with half of the lime juice and half of the zest.
  • Cover and chill until serving.
  • Put the rest of the mango in the freezer for about four hours or until frozen solid.
  • Place the frozen mango pieces in a blender with the rest of the lime juice and lime zest.
  • Before serving, place the chilled mango pieces in the bottom of your glasses (usually makes 6 servings) and remove the coconut ice cream and frozen mango sorbet out of the freezer and allow them to defrost just enough that you can scoop them into the glasses.
  • Decorate with mint leaves, lime slices and sprinkle some lime zest over the top before serving this delicious summer sorbet.

Strawberry and Roses Sorbet

Ingredients:

300g caster sugar

900g strawberries

Juice of 1 lemon

2 Tbsp rosewater

Pink rose petals for decoration

Method:

  • Combine the sugar with 300ml water in a medium pan.
  • Allow the sugar to dissolve before bringing this mixture to a boil. Boil for 1 minutes.
  • Add strawberries to your blender and pulse until smooth.
  • Trickle the sugar syrup into the blender and blend again so that it combines perfectly with the blended strawberries.
  • Add the lemon juice and rose water. Blend well to combine perfectly.
  • Pour this mixture into a large container and freeze the mixture until it is almost frozen.
  • Mix every 1 to 2 hours to blend any crystals into the mixture until you achieve the desired consistency. Freeze until solid and store for up to one month.
  • Allow to stand and soften for 15 minutes before serving.
