Frozen S’mores

Ingredients:

6 – 8 graham crackers

1 1/3 cup heavy cream

4oz bittersweet chocolate (chopped) plus chocolate shavings to garnish

3 egg whites

2 Tbsp sugar

½ cup cream of coconut

Method:

  • Line a 9 inch square baking pan with parchment paper. Leave an overhang on two sides.
  • Place the crackers in the bottom of the pan and cut them to fit if necessary.
  • Heat 1/3 cup of the cream until it starts to simmer. Remove from heat.
  • Add chopped chocolate and stir until the chocolate has melted and the mixture is properly combined and smooth.
  • Spread this mixture over the crackers and freeze for 10 minutes.
  • Use an electric mixer to beat the egg whites until frothy.
  • Add the sugar gradually and beat until stiff peaks form.
  • Set this mixture aside.
  • In another bowl, beat the cream of coconut and the remaining cup of cream until stiff peaks form.
  • Fold the egg whites into the coconut-cream mixture.
  • Spread this egg white and coconut-cream mixture over the chilled chocolate-coated graham crackers.
  • Cover and freeze for at least 6 hours.
  • To remove from the dish, lift the two pieces of parchment paper. Place on a chopping board and cut into pieces.
  • Decorate with chocolate shavings and enjoy.

Peach Ice Pops

Ingredients:

1 cup and 2 Tbsp vanilla yogurt

1/8 almond extract

1 cup raspberries

1 ½ cup peeled peach chunks

Method:

  • Combine the yogurt, almond extract in a bowl.
  • Use your blender to puree the raspberries until smooth.
  • Transfer the pureed raspberries to another bowl.
  • Clean the blender and puree the peaches.
  • Using popsicle molds, layer the raspberry, peaches and yogurt until each mold is full.
  • Freeze until solid and enjoy.

Chocolate Ice Cream Sandwiches

Ingredients:

4 scoops ice cream

8 chocolate-coated biscuits

3 oz bittersweet chocolate (chopped finely)

Method:

  • Set out 8 chocolate-coated biscuits on your worktop.
  • Place one scoop of ice cream on 4 of the biscuits.
  • Place the other 4 biscuits on top to create sandwiches.
  • Freeze on a parchment-lined tray until firm.
  • Melt the bittersweet chocolate.
  • Dip half of each sandwich into this chocolate and freeze for about 5 minutes or until set before you enjoy one of the most popular no bake desserts.
