Spaghetti carbonara is a delicious and popular pasta dish. That said, many people believe that it is difficult to make. The truth is that you only need a few ingredients and less than half an hour to prepare this scrumptious dish.
Ingredients:

  • 1 Tbsp olive oil
  • 150g pancetta or guanciale (finely chopped)
  • 1 garlic clove (whole but bashed)
  • 200g spaghetti
  • 2 egg yolks
  • 50g finely grated parmesan

Method:

  • Warm your serving dishes in the oven or microwave on a low temperature.
  • Heat the oil in a large pan.
  • Fry the pancetta or guanciale along with the garlic for 10 minutes or until the meat is crisp.
  • Remove the garlic clove and discard.
  • Boil the pasta until al dente.
  • Whisk two eggs together in a small bowl with a pinch of salt.
  • Lift the pasta out the water using tongs and place it in the pancetta pan with the dripping water.
  • Stir with a wooden spoon. If it appears dry, add a small amount of water (from the pasta pot).
  • Tip the beaten yolks in with the pasta and stir vigorously.
  • Rinse the yolk bowl with pasta water and add to the pasta and egg mixture.
  • Add most of the parmesan and mix again. If the mixture starts to scramble, simply add some more water. If you have added too much water, allow the pasta to cook over a very low heat for a few minutes. The sauce is supposed to be creamy in consistency.
  • Season with some black pepper and salt to taste.
  • Transfer the pasta to your serving dishes and sprinkle the remaining parmesan over the top.
