Chutney is delicious and can be used in so many recipes. It can be added to your favourite curry, casseroles, and even as a topping on various dishes. You could buy chutney but, if you want something delicious and homemade, you can make your very own.
Ingredients:

  • 1 Tbsp oil
  • 4 cups chopped onion
  • 1 Tbsp minced garlic
  • 8 cups fresh fruit (peeled and chopped)
  • 1 cup dried fruit (chopped to the size of raisins)
  • 1 cup sugar
  • 1 cup vinegar
  • 1 cup water
  • 2 small fresh chili peppers or 1 tsp red pepper (crushed)
  • 1 tsp salt

Method:

  • In a Dutch oven or similar dish, heat the oil and cook your onions over a medium heat until they are light brown.
  • Add the garlic and cook for about 30 seconds.
  • Add the fruit (fresh and dried), vinegar, sugar, water, salt, and chilis.
  • Boil over high heat while stirring often.
  • Reduce the heat and simmer for about 30 to 40 minutes (until thickened).
  • Take a spoonful of chutney place it on a plate. Draw your spoon through the middle of the chutney and, if it stays separated, it’s ready. If not, then cook a little longer and test again until it reaches this consistency.
  • Prepare your jars and fill them to about ½ an inch from the rim of the jar. Wipe the rims of the jars and cover with the lids.
  • Allow your jars of fresh chutney to cool to room temperature before you refrigerate or freeze. You can also process with a water bath and store at room temperature.
