Quesadillas are usually thought of as lunch or dinner items but there is a great way of making them suitable for breakfast too. With plenty of delicious flavour and a high nutritional value, you will love these breakfast quesadillas!
Ingredients (per quesadilla):

  • 2 eggs
  • 1 tsp olive oil
  • 1 cup roughly chopped spinach
  • ¼ cup cooked black beans
  • 1 medium tortilla
  • ½ cup shredded cheese (divided)
  • Hot sauce
  • Salt
  • 1 large avocado
  • 1 Tbsp fresh lime juice
  • 2 Tbsp onion (finely chopped)
  • 3 Tbsp fresh cilantro
  • 1 garlic clove (pressed and minced)
  • ½ tsp ground coriander
  • Pinch of salt

Method:

  • For the guacamole, combine the ingredients in a small bowl and mash everything until combined and smooth. Set the guacamole aside.
  • Prepare the eggs by beating them in a bowl. Season with some hot sauce and salt.
  • Heat 1 teaspoon of olive oil in a pan.
  • Add the spinach and cook while stirring often.
  • When the spinach is wilted, add the black beans.
  • Pour the eggs over the beans and spinach. Cook until the eggs set (1 – 3 minutes).
  • Transfer to a bowl to prevent overcooking. The eggs will continue to cook in the quesadilla.
  • In a large pan, warm the tortilla over medium heat and flip occasionally.
  • Once warm, sprinkle one half of the quesadilla with ¼ cup of shredded cheese. Top the cheese with the egg mixture and then add some more cheese. Keep about 1 tablespoon of cheese aside.
  • Fold the empty half of the tortilla over the other half to close the quesadilla.
  • Allow to cook for about one minute before flipping carefully.
  • Sprinkle some cheese on top and allow to continue cooking on the other side for a couple of minutes.
  • Flip again to cook the cheese topping before removing and placing on a chopping board.
  • Allow to cool a bit before cutting the quesadilla into portions.
  • Serve with the fresh guacamole.
