Just because you are on a gluten-free diet does not mean that you have to sacrifice your favourite treats. The next time you’re craving something sweet, give this scrumptious gluten-free pancake recipe a try.
Ingredients:

  • ¾ cup gluten-free flour
  • ½ tsp guar or xanthan gum
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp sugar
  • 2/3 cup milk
  • 2 eggs
  • 2 Tbsp cooking oil

Method:

  • Place all of the dry ingredients in a bowl and mix.
  • In another bowl, place your milk,eggs, and oil. Whisk together.
  • Add the wet mixture to the dry mixture and whisk until thoroughly blended.
  • Allow the mixture to stand for 10 minutes.
  • Heat your frying pan and grease before cooking each pancake. Be sure to keep the heat set to medium. If you try to cook them too quickly, they will end up overcooked before you are able to flip them.
  • Top with your favourite gluten-free toppings and enjoy!
