Chutney can be made from various different fruits. The kinds of fruits you choose will depend on the season and availability. If you are looking for something seasonal and suitable for the festive season, consider this apple and cranberry chutney recipe.
Ingredients:

  • 1kg cooking apples (peeled and chopped)
  • 500g regular apples (peeled and chopped)
  • 450g sliced onion
  • 50g fresh chopped ginger
  • 1 tsp peppercorns
  • 500g sugar
  • 250ml cider vinegar
  • 500g cranberries

Method:

  • Put all of the ingredients, apart from the cranberries, in a large saucepan.
  • Heat gently while stirring until the sugar has dissolved.
  • Bring to the boil before reducing the heat and let it simmer uncovered for approximately 50 minutes.
  • Stir regularly until the onions and apples are tender. The mixture should thicken and there should be no watery juice left when you’re done.
  • Add the cranberries and allow to cook for another 10 minutes or until they soften but don’t let them burst.
  • Spoon the chutney into sterilised jars while it’s still hot. Seal the jars and store in a cool, dark place.
  • Sealed, the jars will last for up to 6 months. Once opened, the jars should be refrigerated.
