It’s pumpkin season and butternut soup is on the menu! This rich and delicious soup is extremely satisfying as well as nutritious. Here is an easy butternut soup recipe that you can make at home.
Ingredients:
- 40 ounces of butternut squash, cut into cubes or 7 – 8 cups of cubed butternut
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 3 garlic cloves, peeled and smashed
- 7 cups water
- 1 Tbsp salt
- 2 Tbsp sugar and extra if necessary
- ½ cup heavy cream
- Fresh sprigs of thyme to garnish (optional)
Method:
- Combine all ingredients except the cream and thyme in a large pot.
- Bring to a boil before you cover and simmer for 35 minutes.
- Use a hand-held blender to blend the soup. Alternatively, you can allow the soup to cool a bit before blending in batches in your regular blender. Blend until smooth.
- Add the cream and stir.
- Allow to simmer before tasting and adusting the sweetness according to taste.
- Serve the soup and add some fresh chopped thyme to each bowl if desired.
