Valentine’s Day is the perfect opportunity to get creative with your favourite cake recipes. Even if you have never baked a cake, you can safely bake several mini cakes so that you can discard any flops without having to throw away an entire cake. You could even bake several different types of cake and decorate them with various kinds of frosting.
When baking your cakes, you should make two sponge cakes for each mini cake. If your sponge cake is particularly tall or if you don’t want tall cakes, then you could bake your cakes and cut them in half so that you have two layers.
Fill the middle of your cakes with your favourite frosting. You can make one chocolate, a vanilla, and a strawberry frosting. Alternate between these flavours and you can even combine them. For example, you can fill a cake with chocolate frosting and cover it with chocolate frosting and vice versa.
Once you have applied the frosting filler, refrigerate until firm. You can then apply a thin layer of frosting to the outside of the cake and refrigerate again. Once firm, you can coat the cake in frosting to give it the perfect finish. Let your cakes set but don’t let the frosting firm up too much. You still want to apply decorative sweets.
You will also need a selection of pink and red sweets as well as chocolate. If you can, look for sweets that are heart-shaped to suit the Valentine’s Day theme. Set your mini cakes on individual plates and set on a table or on a cake stand or two. For the best visual effect, you should make sure that your mini cakes are placed in a buffet table style by raising some up and letting others rest directly on the table.
