Marshmallow waffel cookies
You will need:

  • 2 marshmallows
  • 2 waffle cookies
  • 1 teaspoon jam (raspberry preferably)

Method:

  • Heat the broiler and place your marshmallows on a foil-lined baking sheet.
  • Broil for about 1 minute, turning once halfway through.
  • Spread the jam on one of the cookies and place the marshmallows on top.
  • Top with the second cookie and enjoy!

Popped rice cereal treats
You will need:

  • 1 bag of marshmallows (10 ounces)
  • 6 cups popped rice cereal
  • 2 tablespoons butter
  • 12 ounces chocolate

Method:

  • Melt the butter and marshmallows together in a saucepan on a medium-low heat.
  • Stir until smooth. This should take about 6 to 8 minutes.
  • Remove from heat and add the cereal. Stir gently but thoroughly until combined.
  • Press into a baking dish (ideal size 9 x 13 inches).
  • Chop the chocolate and melt in the microwave or using a double-boiler method on your stove.
  • Spread the melted chocolate evenly over the top of your pressed rice mixture.
  • Cover and refrigerate for at least 45 minutes.
  • Cut into squares and enjoy!

Marshmallow popcorn treats
You will need:

  • ½ cup popcorn kernels
  • 1 bag of marshmallows (10 ounces)
  • 2 tablespoons of butter

Method:

  • Pop the popcorn kernels as per the usual instructions but take care not to add any salt.
  • Butter your dish (ideal size 9 x 13 inches) while the corn is popping.
  • Melt the butter and marshmallows together in a saucepan on a medium-low heat.
  • Stir until smooth. This should take about 6 to 8 minutes.
  • Add the popcorn and fold the mixture together gently until the corn is completely coated.
  • Pour and press into the dish.
  • Allow to stand at room temperature for 10 minutes before cutting and serving.

Don’t forget traditional favourites like s’mores and roasted marshmallows over an open fire. These are both really easy and you can make as many as you want.
