You will need:
- 1 can pumpkin (15 ounces)
- 1 can sweetened condensed milk (14 ounces)
- 2 large eggs
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp salt
- 1 unbaked pie crust (9 inch)
Method:
- Start by preheating your oven to 425 degrees F while you prepare your pie.
- Whisk together the pumpkin, condensed milk, eggs, salt, and spices in a medium bowl. Mix all of these ingredients together until you obtain a smooth consistency.
- Pour the mixture into the pie crust and bake for 15 minutes
- Turn your oven down to 350 degrees and continue baking for 35 to 40 minutes or until fully cooked.
- Test your pie by inserting a knife into the centre and, when it comes out clean, then you know your pie is done!
- Remove from the oven and allow to cool somewhat before serving. Garnish as desired and store any leftovers in an airtight container in the refrigerator.
If you like, you can skip the canned pumpkin and use fresh pumpkin instead. You will need to cook the pumpkin and blend it into a thick liquid so that it mixes thoroughly with the other ingredients. If you have a special pie crust recipe, you can make the crust before you begin making the filling.
