Mini Strawberry Tarts
This tart calls for a pistachio crust to hold the cream cheese and lemon filling. Topped with sugar-coated strawberries and you’re all set! Sure, you could make a full sized tart using these ingredients but the bite size variety is easier to manage and easier to serve to your guests.
Spiced fruit tart
If you want something with a bit more of a “kick” then try soaking fruit in some bourbon for several hours before tossing them into a classic sweet pie and enjoy! Just make sure that you don’t let the kids in on this dish! You might need to make an alcohol-free option for younger guests.
Custard fruit tart
A light tart with a fresh fruit flavour and just the right amount of sweetness. You can make a full sized tart or mini tarts if preferred. Simply use your basic pie shells, fill with custard and top with fresh fruit. Glaze with gelatine to give it all a gorgeous shine and to help keep all the fruit pieces perfectly in place.

This tart combines the citrus flavours of lemon and orange for a refreshing blend. Combined with the gingersnap crust and you’ve got a crowd pleaser! This tart can be prepared in advance for events and frozen for up to one month! When you are ready to serve, make sure that you remove the tart from the freezer and allow it to thaw out slowly in the fridge overnight. Top with whipped cream no more than four hours before serving.
