Sparkling Mango Cocktail

  • 1 cup diced mango

  • 1 1/2 cups orange juice

  • 1 bottle (750 ml) chilled dry sparkling wine for every 5 drinks

  • Lime wedges

Combine the mango and orange juice in a blender and process on high until smooth (about 2 minutes). Put 2 tablespoons of this puree in each glass and add a bit of sparkling wine. Stir to loosen the pulp before topping up with sparkling wine. Serve each glass with a lime wedge.

Mimosa with a twist

  • 3 ounces pink grapefruit juice

  • 3 ounces chilled sparkling wine

  • 1/2 ounce Cynar

Pour the cynar and grapefruit juice into a champagne glass before topping up with sparkling wine. Enjoy it while it’s cold!

Peach and Aperol

  • 1/2 cup water

  • 1 cup frozen peach slices (thaw them out first)

  • 1 1/2 teaspoons extra fine sugar

  • 1/2 cup Aperol

  • 1 bottle (750 ml) dry sparkling wine for every 5 servings, chilled

  • 1 thinly sliced lemon

Combine the peaches, sugar, water, and Aperol in a blender and process on high until smooth (approximately 2 minutes). Pour 2 tablespoons of this mixture into each of your glasses and add just a bit of sparkling wine. Stir to loosen up the fruit mixture before topping up with sparkling wine. Garnish with a lemon slice.

When using sparkling wine or champagne in any cocktail, it’s important to make sure that you chill the bottle very well first. If the sparkling wine is too warm, it will make the entire drink warm and this means that it’s simply not as refreshing as it should be.
