We often receive gift hampers for various occasions including birthdays and Christmas. If you end up with lots of leftover nuts and you don’t want them to go to waste, you can use this recipe to make your very own nutty snack.
You need:
- 3 cups leftover nuts
- ½ cup mixed seeds
- 2 Tbsp olive oil
- Honey for drizzling
- Sea salt flakes
- Herbs and spices of your choice (for example cumin seeds, pepper, rosemary and paprika). Use approximately 1 or 2 teaspoons of each.
Instructions:
- Place your nuts and seeds in a large bowl.
- Drizzle some honey and olive oil over them.
- Mix the dry herbs and spices in a small bowl and sprinkle them over the nuts.
- Mix together properly so that all of your nuts are coated.
- Spread the nuts out onto a baking tray. Make sure that they don’t overlap.
- Place on the middle shelf in the oven (preheat to 180 degrees Celcius).
- Roast for about 10 minutes and make sure that you stir them every few minutes so that they are roasted evenly.
- Once slightly browned, remove them from the oven and allow them to cool down.
- Don’t let them cook too much because they will continue to cook on the hot tray.
- Once cool, you can store for up to three days in an airtight container.
This recipe is for a small quantity but you can multiply the recipe if you like. You don’t have to wait for leftover nuts just to make this scrumptious snack.
