In the warmer months, light desserts are always preferable. We tend to opt for fruit desserts like fruit tarts instead of heavy caramel and chocolate dishes. We also tend to eat much less during the summer than in the winter. This not only matters when it comes to food but also desserts. Of course, fruity, custard tarts are delicious no matter the time of year. Whether you’re organizing a fun family event or simply want to use up some extra fruit at home, here’s how to make your own mini cream tarts!

The first thing to remember is that the crust can be tricky for many novice bakers, as well as time consuming. That’s why you may want to use ready-made mini crusts instead of making everything from scratch. Preparing the filling for your fruit tarts is really simple and won’t take much time. This is useful when you have a large variety to prepare.

Ingredients:

  • 2 ¾ cups milk

  • 2/3 cup sugar

  • 4 egg yolks

  • ¼ cup cornstarch

  • 1 teaspoon vanilla essence

  • 2 tablespoons butter

  • pinch of salt

  • ¼ cup currant jelly/jam (for the glaze)

Directions:

  • To begin, you will need to place your milk, cornstarch, sugar, salt and egg yolks in a blender.

  • Blend for about 5 minutes before pouring into a microwave-safe bowl.

  • Microwave on high for about 6 minutes.

  • Remove after the first 3 minutes and whisk together before placing back in the microwave to heat for another 3 minutes.

  • Whisk again and add the vanilla and butter.

  • Whisky again until smooth.

  • Prepare your pie crusts on a tray or multiple trays, depending on how many you wish to make.

  • Fill each tart with the cream filling. You can use a pastry bag to create a pretty design if you like or even just to make it easier to fill them without a mess.

  • Top each tart with some fruit. Stewed fruits or any fruit that will not become brown are best.

  • You can then melt the black currant jelly and brush it over the top to help the fruit stick in place on your fruit tarts.

If you like, you can top your custard fruit tarts with some whipped cream. Of course, if you aren’t sure what your guests will like, you can let them add cream themselves. Simply leave a can on hand for them to top as they please.
