Ingredients:
- ½ tablespoon butter
- 8 ounces non-fat cream cheese (or the light variety if non-fat isn’t available)
- ¼ teaspoon black pepper
- 2 garlic cloves
- 1 cups non-fat milk
- 2 tablespoons parmesan cheese (or more if you like)
- 6 ounces (or ¾ cup) mozzarella cheese
- Salt to taste (or garlic salt if preferred)
Directions:
- Making Alfredo pasta sauce is easier than many people realise. To begin, melt the butter over medium heat in a pot or sauce pan.
- Add your cream cheese and stir well.
- Next, add garlic and pepper.
- Now, you can add some milk. Make sure you add it slowly while mixing.
- Once blended, add the mozzarella and mix until melted and blended.
- Now you can add parmesan and stir well to combine.
- Now, you can add salt and, if you like, some more garlic to taste.
- Remember, the sauce will thicken as it cools and, if you add the pasta at this stage, you should keep some sauce on the side. Pasta tends to absorb the sauce so it can seem dry if you serve after a few hours.
- If the sauce is too thick, you can add some milk. If it becomes lumpy, you can use a blender to mix again.
This recipe is particularly low in calories thanks to the low-fat and fat-free products used. If you don’t mind a few extra calories, you can use cheese and high-fat dairy products. This will result in a creamier sauce but will also increase your calorie intake. Another good tip to remember is that the best pasta to use with this Alfredo pasta sauce is fettuccine.
