Sauce is essential when serving Christmas lunch or dinner. Since you’ll likely be serving several types of meat, it’s important to have at least one type of sauce. Turkey gravy is easy to make with just three simple ingredients. Once you try this Christmas gravy recipe, you’ll never look back.

Ingredients:

  • 700ml turkey stock
  • 2 Tablespoons of flour
  • 2 Tablespoons of masala (optional)

Instructions:

  • Once your turkey is perfectly cooked in the oven, you should avoid discarding any of those drippings in the baking pan or tray. Set the turkey aside in or on another dish.
  • Place your baking tin on your stove to heat it up before adding your flour to the turkey fat in the pan.
  • Slowly add your turkey stock to the pan while stirring to ensure that your Christmas gravy does not turn out lumpy.
  • Remember to mix well to loosen up any solid pieces from the pan.
  • Once all the stock is added and mixed well, allow the gravy to boil slowly.
  • At this point, if you wish, you can add some masala.
  • Reduce the heat and allow to simmer for about 5 minutes or until the gravy has thickened.
  • Transfer the gravy into your gravy bowl or pourer and keep heated until you are ready to serve. You can also place some plastic foil over the gravy (touching the top) to prevent a film from forming over the top.

If the sauce cools and you forgot to add some plastic over the top, a sort of “skin” may form on the surface. If you mix this thick “skin” into the sauce, lumps may form. It is often best to remove the top and discard before serving. Stirring regularly will also help prevent this skin from forming.
