Cake pops are gaining popularity among those who are knowledgeable about sweet treats. These bite-sized confections are ideal for any occasion, whether it’s Christmas, New Year’s, or a birthday celebration. They are guaranteed to leave your guests craving for more. What you need:
- Cake mix of your choice
- Frosting of your choice
- Food colouring (optional)
- Cooking chocolate
- Sprinkles of your choice
- Polystyrene block
- Cake pop sticks
Directions:
- Prepare your cake mixture as per the instructions on the package. Once baked and cooled, you can crumble the cake into a bowl. You might like to bake the cake a day or two in advanced to allow some moisture to evaporate and make it easier to crumble.
- If you don’t have time to bake, you can use prebaked cake layers from your local supermarket.
- Once crumbled, you can work on the frosting in a separate bowl. Again, make this mixture according to the instructions on the box. Alternatively, you can combine softened butter with powdered sugar and beat well until you achieve the desired texture and consistency.
- Slowly add spoonfuls of the frosting mixture to your crumbled cake and mix until you achieve the right consistency. You can test by rolling up a cake pop and check to make sure that it does not fall apart. Once this is achieved, you can proceed to the next step.
- Line a tray with some parchment paper and roll the cake mixture into small balls. They should be the size of a regular lollipop or about 3cm in diameter if cut in half. Do not make them too large or they will become heavy and fall off the sticks.
- Once all of the balls are rolled, melt some chocolate in a pot using the double boiler method. Take care not to allow any water to drip into the pot with the chocolate or it will seize.
- Once melted, dip your lollipop sticks in the melted chocolate and insert them into each of the cake balls.
- Place these balls in the fridge for about 30 minutes to allow them to firm up and to ensure that the stick sets in place.
- During this time you can add more chocolate to the pot for melting. You can also prepare your sprinkles by placing each type in a separate bowl.
- Prepare your polystyrene block by lining it with some tinfoil or, if you prefer, you can set aside a collection of whisky glasses so that your cake pops will be supported as they set after dipping.
- Remove a few of your cake pops from the tray in the fridge and place on a plate. This ensures that the rest stay chilled while you work.
- Dip the cake pop in the melted chocolate and carefully swirl around just above the chocolate to help any excess drip off quickly.
- Decorate with sprinkles and insert in the polystyrene block or in one of your glasses.
- Proceed in the same way with the rest of your cake pops until they are all done.
- If you need them to set in a hurry, you can place them in the fridge for a few minutes but do not leave them in too long or they will develop condensation on the chilled chocolate when they are served.
