Ingredients:

Lavender sugar ingredients:

  • 2 tablespoons of fresh lavender flowers OR 1 tablespoon of dried lavender flowers
  • 1 cup of extra fine white sugar

Cookie ingredients:

  • 1 cup and 1 tablespoon of all purpose flour
  • 4 tablespoons of butter
  • 1/3 cup of lavender sugar
  • 1 pinch of salt
  • 2 and a half tablespoons of sweet white wine
  • 12 fresh lavender leaves (chopped fine)

Method:

  • To make lavender sugar, all you need to do is combine the flowers and the fine sugar. Place this mixture in an airtight container and set aside in a warm, dry place for 2 weeks to allow the flavour of the flowers infuse into the sugar.
  • When you are ready to begin making the cookies, you will need to preheat your oven to 375 degrees F.
  • Prepare your baking sheets by lining them with parchment paper or grease with butter.
  • Measure out 1 tablespoon of lavender sugar to set aside for later.
  • Next, whisk together the flour, salt and the rest of the sugar.
  • Add the butter and rub together with the dry mixture.

  • When the edges start to brown, remove them from the oven, allow to cool to room temperature and dust with the lavender sugar.
