Ingredients:

  • 2 cups whipping cream
  • 2 Tbsp confectioners’ sugar
  • 1 ½ tsp peppermint extract
  • 2 cups milk
  • 7 ounce package vanilla instant pudding mix
  • 1 cup small choc chips
  • 5 – 6 drops green food colouring
  • 1 baked pie shell (9 inch)

Directions:

  • To make this mint and chocolate pie, you will need to start by beating together the cream and sugar until stiff peaks form.
  • In a separate bowl, combine the milk, peppermint extract and the food colouring.
  • Add the pudding mix to the milk mixture and mix on low for about 2 minutes, or until thick.
  • Fold the cream mixture into the pudding mixture before adding the chocolate chips.
  • Pour this mixture over a pastry shell and, if you like, you can top with more chocolate chips.
  • Refrigerate for about three hours before serving.

The green food colouring is an optional ingredient in this mint and chocolate pie recipe. Of course, it is important to understand the importance of the visual element when preparing any dish. Since we associate green with mint, this touch of colour will go a long way. In addition, if you wish to make smaller versions of this pie, you can use mini pie crusts instead of one large pie crust.
