Ingredients:

  • 3 Tbsp olive oil
  • 2 boneless pork chops
  • 1 Tbsp Dijon mustard
  • 1 Tbsp tarragon chopped
  • 2 shallots chopped
  • ¾ cup white wine
  • 2 Tbsp heavy cream
  • 1 head frisee torn into pieces
  • 1 lemon (cut into wedges)
  • salt and pepper

  • For this recipe, you will need to heat your oven to 400 degrees F.
  • Heat 1 tablespoon of oil in a large pan.
  • Season the pork with salt and pepper before browning in the pan for 2 minutes on each side.
  • Place the pork on a baking sheet and roast in the oven until cooked all the way through.
  • Add your shallots and one tablespoon of oil to the pan and cook until soft.
  • Add your wine to the shallots and simmer until the liquid reduces to half its original amount.
  • Add cream to the pan and simmer until it thickens.
  • Add mustard to the pan and mix well.
  • Top your pork with this sauce and sprinkle tarragon over the top.
  • You can drizzle some leftover oil over the top and serve with a side of lemon wedges.
