The good news is that there are some amazing recipes available that are perfect for diabetics. Here are some delicious chocolate dessert ideas to consider.

Dark Angel Food Cake

Ingredients:

  • 1 cup of all-purpose flour (unbleached)
  • 1 cup of sugar
  • ½ tsp of ground cinnamon
  • 1/3 cup of unsweetened cocoa powder
  • 1 ¼ tsp of cream of tartar
  • 10 egg whites
  • 1 ½ tsp of vanilla extract
  • 1 cups of fresh berries
  • Confectioners sugar

Directions:

  • For this chocolate dessert recipe, you will need to preheat your oven to 350 degrees F.
  • While the oven is heating up, sift together the flour, cinnamon, cocoa and half a cup of sugar.
  • With an electric mixer, beat the egg whites and then add the cream of tartar. Beat together until soft peaks form.
  • Slowly beat in the remaining sugar and vanilla extract. Again, beat until small peaks form.
  • Fold the dry mixture into the wet mixture. Make sure you only add one cup of the dry mixture at a time and fold to mix before adding more.
  • Pour the mixture into a 10” tube pan and take a moment to ensure that there are no air pockets.
  • Bake for 40 minutes or until the centre is cooked. Use a toothpick to test.
  • Cool upside down on a bottle neck for about 40 minutes.
  • Turn the pan around and run a knife around the edges to loosen it up before removing the cake and placing on a cooling rack.
  • Top with berries and a dash of confectioners sugar to serve. You can, of course, skip the sugar if preferred.

Healthy bran cookies

Ingredients:

  • 1 box low-fat brownie mix
  • 2 ½ cups of unprocessed bran
  • ½ tsp of coconut extract
  • ¾ cup of orange juice
  • Confectioners sugar

Directions:

  • For this chocolate dessert, you will need to begin by preheating your oven to 350 degrees F.
  • Coat two baking sheets with cooking spray.
  • Combine the brownie mix and bran before you add the coconut extract as well as the orange juice.
  • Place the mixture in the baking sheets with a teaspoon.
  • Bake for 12 minutes before removing from the oven and place on a cooling rack.
  • If desired, you can dust with confectioners sugar before serving.

Chocolate Bites

Ingredients:

  • ½ cup of unsweetened cocoa powder
  • ½ cup of sugar (divided)
  • 1/8 tsp of cream of tartar
  • Pinch of salt
  • 1 tsp of vanilla extract
  • 3 egg whites
  • 1 Tbsp of confectioners sugar

Directions:

  • This delicious chocolate dessert is very easy to make. Simply preheat your oven to 300 degrees F and line two baking sheets with foil.
  • Sift together the cocoa, salt and half of the sugar.
  • In another bowl, beat together the eggs and cream of tartar until soft peaks form.
  • Beat the remaining sugar into the egg mixture until the peaks are stiffer.
  • Fold the cocoa mixture into the egg mixture before adding the vanilla extract.
  • Use a teaspoon to place the mixture into your baking sheets.
  • Bake for about 25 minutes if you prefer them soft. You can bake for up to 40 minutes if you prefer them crunchy.
  • Dust with confectioners sugar if desired before serving.

While the chocolate dessert recipes above do contain some sugar, they do not contain as much as most recipes. It is important to mention this to your guests so that they enjoy in moderation and void overindulging.
