  • Wrap the prosciutto around each of your shrimp and allow the tail to hang out.
  • Slide a skewer through the covered shrimp. You can add up to five per skewer.

Ingredients:

  • 2 cups shredded rotisserie chicken breast (remove skin and bones)
  • 1 chopped onion
  • 1 Tbsp olive oil
  • 2 cans of white beans (rinsed and drained)
  • 4 minced garlic cloves
  • 1 Tbsp chopped thyme
  • 4 canned, plum tomatoes (drained)
  • ½ cup water
  • 3oz baby spinach leaves (roughly chopped)
  • 1 can fat-free chicken broth
  • ¼ black pepper
  • ¼ tsp salt

Directions:

  • Start by heating the oil in a medium saucepan.
  • Next, add the onion and cook until softened.
  • Add the thyme and garlic before cooking for another minute while stirring.
  • Add the tomatoes, beans, broth and water.
  • Increase the heat until it begins to boil.
  • Reduce the heat and allow to simmer for approximately 5 minutes.
  • Break up the tomatoes using a spoon.
  • If needed, add some more water.
  • Next, add the spinach and stir until the leaves start to wilt.
  • Next, add your chicken and cook for 2 minutes.
  • Add salt and pepper to taste and serve!

  • 2 cups milk (2% reduced-fat)
  • 1 cup canned pumpkin
