If you enjoy liqueur chocolates, you will know just how delicious they are during the cooler months in particular. They are great for serving to your guests around the holidays and they can be presented as gifts if you visit a friend or loved one during this time. If you would like to make your own, here is an easy chocolate recipe you can follow.

What you need:

  • 8oz of water
  • 390g of fine granulated sugar
  • 1 cup of liqueur of your choice
  • Candied orange peels
  • 4 Tablespoons of soft, unsalted butter
  • 4 Tablespoons of confectionery fondant
  • Chocolate moulds (for making small chocolate cups)
  • Chocolate for the exterior chocolate shells

Directions:

  • Start by melting your chocolate and pouring it into the moulds. Make sure that you melt the chocolate using a double boiler method since this will ensure that it does not burn.
  • Place the inserts inside your chocolate moulds so that they will help create a hollow centre.
  • Set your chocolate moulds aside to set while you make the filling.
  • Boil the sugar and water together before you allow it to cool to room temperature.
  • Mix 8 ounces of this syrup with 8 ounces of liqueur.
  • Remove the inserts from the moulds and place a candied orange peel inside each chocolate.
  • If needed, use some melted chocolate to stick the orange peel in place and prevent it from floating.
  • Fill each chocolate with the liqueur mixture but do not fill to the brim.
  • Cream together the butter and fondant.
  • Warm the fondant mixture to make it more liquid.
  • Use a piping bag to pipe a layer of the fondant mixture on top of the liqueur in the chocolates.
  • Allow to cool to room temperature.
  • Seal your chocolates with some melted chocolate. You can add some grapeseed oil to the melted chocolate to thin it out a little if you like.
  • Allow your chocolates to set completely before removing them from the moulds and setting them on a tray or decorative plate for your guests.
