If you love the idea of chocolate and pumpkin, you are in for a real treat with this brownie recipe! You will only need a few basic ingredients to whip up the most delicious sweet autumn treat for your family and friends.
Ingredients:
- 1 ¼ cups of semisweet chocolate pieces/chunks
- 1 cup of unsalted butter
- 1 ounce of unsweetened baking chocolate
- 6 large eggs
- 1 cup and 2 tablespoons of sugar
- 2 tablespoons of cold brewed coffee
- 1 tablespoon of vanilla extract
- 2/3 cup of all-purpose flour
- 1 ½ teaspoons of baking powder
- 1 teaspoon salt (divided)
- 15 ounce can of pumpkin puree
- ½ cup of heavy cream
- 1/3 cup of brown sugar
- 1 ½ teaspoons of pumpkin pie spice
Instructions:
- Start by heating your oven to 350 F. Pour 1 inch of water into the bottom of a double boiler and place over medium heat. Bring the water to a boil before reducing the heat to a simmer.
- Place the semisweet chocolate, butter and unsweetened baking chocolate in the pot to mix and melt. Once melted, remove from heat and allow to cool for 10 minutes.
- Whisk 3 eggs together with your granulated sugar as well as the coffee and vanilla extract.
- Gradually add the chocolate mixture to this egg mixture and allow to stand for 10 minutes to cool further.
- Grease a 13 x 19-inch baking pan with some butter and line the pan with parchment paper. Grease and flour the parchment paper too.
- Sift the flour, baking powder and half the quantity of your salt into a bowl.
- Add the chocolate mixture and whisk to blend.
- Pour this mixture into the baking pan but set aside 2/3 of a cup.
- Whisk together your pumpkin along with the heavy cream, brown sugar and pumpkin spice.
- Pour this mixture over the brownie batter in the pan and see your chocolate and pumpkin brownies start to take form.
- Drizzle the remaining chocolate batter over the top to create a swirling design.
- Bake at 350 F for 45 to 50 minutes or until your toothpick test comes out clean.
- Remove from the oven and allow to cool on a wire rack (approximately 2 hours)
- Lift your brownies from the pan by using the parchment paper to hold on to.
- Remove the paper and cut into 24 delicious squares.
As you can see, you don’t need a lot of ingredients to make these scrumptious chocolate and pumpkin brownies. However, you will need a little bit of time and patience since there are three main stages to the recipe. It will, of course, all be worthwhile when you take that first bite!
