Mince pie is a delicious treat and it’s great for those who enjoy tasty and traditional treats. The best part about these scrumptious pies is that they are really easy to make with just a few basic ingredients.

Ingredients:

  • 280g mincemeat
  • 225g diced butter
  • 100g caster sugar
  • 350g plain flour
  • 1 egg
  • Salt
  • Icing sugar for dusting

Directions:

  • To begin, you will need to make the pastry. So, start by running the butter and flour together.
  • Add a pinch of salt and the caster sugar and mix well.
  • Roll your mince pie pastry into a ball and kneed for just a few minutes without adding any liquid.
  • Once the dough is properly blended and firm, you are ready for the next step.
  • Preheat your oven to 200 degrees Celsius (gas) or 180 degrees Celsius (fan).
  • Divide the pastry into two portions. Once should be slightly larger than the other.
  • Divide the larger portion of dough into 18 equal portions.
  • Apply non-stick spray to a cupcake/muffin tray with 18 holes.
  • Press the dough into these holes.
  • Spoon the mince into each of the unbaked pie shells.
  • Divide the remaining dough into 18 equal portions and roll them into balls.
  • Flatten each of the balls and roll them out just enough so that they form the top of the pie.
  • Press the edges of the base and the top together to seal them.
  • If you wish, you can freeze your pies at this stage and simply bake them when you are ready. They will keep in the freezer for up to one month. Make sure you thaw them out before baking.
  • Beat the egg and use a brush to coat all the tops of the pies.
  • Bake for 20 minutes or until the pies have a nice golden colour.
  • Remove the pies and allow them to cool for about 5 minutes before you place them on a cooling rack.
  • Dust lightly with some powdered / icing sugar before serving.
  • Once they are cooked, they can be stored in an airtight container for up to 4 days.

As you can see, this mince pie recipe is really simple. You can make larger batches and freeze them so that you don’t have to make each batch one at a time for each occasion. When you need to serve your guests something delicious, you can simply remove as many as you need, thaw them out and bake.
