  • 20 large shrimp (thawed, deveined, and peeled)
  • 10 thin slices of prosciutto
  • 1 teaspoon extra virgin olive oil

  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon lemon zest
  • 1/8 teaspoon black pepper
  • 8-inch skewers
  • Cooking spray to prevent sticking and lemon wedges for serving.

Directions:

  • Combine your shrimp with the oil, salt, basil, red and black pepper as well as the lemon zest. Mix well and set aside.
  • Arrange the slices of prosciutto side by side on a flat surface. Cut them in half so that you have 20 pieces.
  • Wrap the shrimp in the prosciutto and let the tail hang out.
  • Slide the skewer in to hold it all together.
  • You can add 5 shrimp to each skewer.

Ingredients:

  • 1 tablespoon olive oil
  • 4 minced garlic cloves
  • 1 chopped onion
  • 2 cans of white beans (rinsed and drained)
  • ½ cup of water
  • 1 tablespoon chopped thyme
  • 1 can fat-free chicken broth
  • 4 canned, plum tomatoes (drained)
  • 2 cups of of shredded rotisserie chicken breast (remove skin and bones)
  • 3oz baby spinach leaves (roughly chopped)
  • ¼ teaspoon salt
  • ¼ black pepper

Directions:

  • Heat the oil in your saucepan.
  • Add the onions and cook until soft.
  • Add the thyme and garlic. Cook for another minute and make sure you stir.
  • Add the tomatoes, beans, broth and water.
  • Increase the heat and bring the dish to a boil.
  • Reduce the heat and then allow to simmer for 5 minutes.
  • Break up the tomatoes using a spoon and, if necessary, add some more water.
  • Add spinach and stir.
  • Add the chicken and cook for 2 minutes,
  • Season with salt and pepper.

Ingredients:

  • 2 cups of of milk (2% reduced-fat)
  • ¼ cup of cornstarch
  • ¾ cup of brown sugar
  • 1 cup of canned pumpkin
  • 2 eggs
  • ¼ teaspoon pumpkin-pie spices
  • ¼ teaspoon salt

Directions:

  • Whisk together the milk, cornstarch and sugar in a large saucepan while slowly bringing it to a boil.
  • Boil for about 3 minutes while whisking constantly.
  • Beat the eggs in a bowl and slowly add half of the boiling milk to the eggs.
  • Slowly pour the egg and milk mixture back into the pot while whisking.
  • Continue cooking and whisking until it thickens.
  • Remove the pot from heat and then add the pumpkin, salt and pumpkin spice.
  • Spoon the mixture into cups or bowls.
  • Allow to cool and set. This normally takes about 30 minutes.
