If you love the taste of vanilla custard and you are looking for a recipe for a vanilla custard cake filling, you’re in luck! All you need is a handful of basic ingredients and you can make the creamiest and most delicious filling you’ve ever enjoyed!

Ingredients:

  • 240ml milk
  • 240ml cream
  • 6 egg yolks
  • 100g sugar
  • 60g cornstarch
  • 2 tsp vanilla
  • 2 tbsp butter

Directions:

  • Begin making this delicious vanilla custard by measuring all of your ingredients.
  • Heat the milk, cream and vanilla over a medium heat.
  • Allow the mixture to heat but not quite boil.
  • While the mixture is warming up, you can mix the egg yolks, cornstarch and sugar in a bowl. Whisk until foamy and light.
  • When you notice little bubbles start to form around the edge of the pot, you need to temper your eggs. Do this by adding some of the milk mixture to the egg mixture little by little. Do this slowly.
  • Once half of the milk mixture has been mixed in with the egg mixture, you can pour the egg mixture back into the saucepan with the remaining milk mixture.
  • Continue cooking on a low heat and stir constantly.
  • Make sure that you cook slowly or it will curdle.
  • Once it thickens enough to coat the back of the spoon, it’s time to strain the custard.
  • Add the butter and mix very well.
  • Cover with plastic wrap and make sure that the plastic is in direct contact with the custard. This will prevent a ‘skin’ from forming on top of the custard as it cools.
  • Once at room temperature, place in the fridge for a couple of hours to chill completely.
  • When chilled, remove from the fridge and beat on high for about three minutes to give your custard that glossy look.
